Chef Danielle Forsman is a Jersey girl. A South Jersey girl to be specific. As a child, she grew up surrounded by the farmlands and pastures of South Jersey and learned to love the flavors and colors of the fruits, vegetables and grains that those farms produced. She understood early on that knowing where your food comes from, understanding the care with which it is grown and even being able to bend down and grab a handful of the soil that gave it life is vitally important to healthy and holistic living and, most importantly, truly enjoying the experience of food. It is this insight that she has brought to her passion for cooking.  

First and foremost, Chef Danielle is an artist. Her palate is the local and organic produce of South Jersey with all its freshness and flavor. In her creations, Chef Danielle feels the rhythms of the seasons and takes her inspiration from what she sees ripening around her. In South Jersey’s cold months, she looks to her friends growing organic produce around the country as the source for her Winter dishes until the Spring comes and South Jersey begins to blossom again.   

Now, Chef Danielle has brought her artistry and passion to The Enoteca at Auburn Road Vineyards as our very own In-House Chef! Peruse her menus and follow her on Facebook on Chef Danielle's Fan Page as she flows with the seasons and creates meals at The Enoteca that will truly capture the taste of South Jersey. Chef Danielle calls it “rustic comfort food” – with all the freshness and goodness of foods that were grown with care right outside your door and prepared with the wisdom, creativity and sensitivity to what is important that characterizes a chef who truly “gets it”.  “Rustic Comfort Food” is food that warms you in the Winter and calls to you in the Spring. It is tomatoes and peaches and grilling on The Enoteca’s patio in the Summer. It is roasts and apples and pumpkins in the Fall.
