The White Bottle

Tasting Notes: Aromatic and vibrant Chardonnay.  Creamy mid-palate and emphasis on mouthwatering fruit and acidity.

Grape & Vineyard: 100% estate grown Chardonnay from Auburn Road’s Woodfield vineyard; Soil:  Sandy;  AginFrench oak barrels, 25% new.

Wine Notes: Cold, slow fermentation in stainless steel tanks then “sur lie” aged in French oak barrels for 6-7 months. 25% new. The wine’s creamy character comes from stirring the fine solids that drop to the bottom of the barrels every 2 weeks so they are integrated back into the wine.  Several barrels retain the natural malic acid in the wine, while the rest go through malolactic or secondary fermentation turning the natural malic acid to lactic acid.  All are then blended to give this wine its unique flavor.

Food Pairings: Truffle cheese, cream sauces, salmon and chicken.

Dry Rosé

Tasting Notes: Dry Provence-like rosé.  Light, pink and ripe with the soft fragrance of tangerine, citrus and strawberries.

Grape & Vineyard: Juice in varying percentages from 100% estate grown grapes grown at both Auburn Road’s main vineyard and Woodfield vineyard; Soil:  Sandy and sandy loam; 2016 Blend:  52% Merlot, 24.5% Sangiovese, 23.5% Cabernet Franc.

Wine Notes: The wine is created by pumping off 10-20% of the juice after the red grapes are crushed, and the juice is cold fermented separately by variety.  After fermentation, the wines are tasted, evaluated and blended into the final dry rosé product.

Food Pairings:  Sushi, shellfish and slightly sweet savory dishes.

Gaia

Tasting Notes: Sophisticated dry red blend aged two years in French oak barrels.  Savory, earthy black pepper flavors with hints of cherry, strawberry and violet.  Silky finish with well-integrated, chewy, dusty tannins.

Grape & Vineyard: 100% estate grown Cabernet Franc, Merlot and Petit Verdot from Auburn Road’s Woodfield vineyard; Soil:  Sandy; Blend:  Cabernet Franc (81%), Merlot (14%) and Petit verdot (5%).

Wine Notes:  In the vineyard at bloom (around May), the first leaf across from the forming Cabernet Franc grape cluster is removed to enhance ripe flavors.  The wines are blended about half way through the barrel aging process. The goal in creating this wine is to balance the fruit with the structure created by the grape and oak tannins so that the wine’s flavors continue in your mouth for a long time.  Together it creates a sophisticated and savory medium bodied wine.

Food Pairings:  Roasted meats or crispy skinned trout, goat cheese, feta, and fontina cheese.

Eidólon

Tasting Notes: Deep, dark, dry full-bodied red blend.  The front palate begins with bright acidity, then blackberry and currant fruit bursts through the mid-palate.  The wine finishes with smooth, velvety cherry and vanilla undertones.

Grape & Vineyard: 100% estate grown Merlot, Chambourcin and Petit Verdot from Auburn Road’s Woodfield vineyard and Auburn Road’s main vineyard; Soil:  Sandy/sandy loam; Blend:  Chambourcin  (45%), Merlot (45%) and Petit verdot (10%).

Wine Notes: After fermentation, the Chambourcin grapes stay in the bins for another 2-3 weeks for an extended maceration to extract phenolic compounds from the grapes – creating more structure, mouth-feel and palate length.  The wines are kept separate by varietal for almost two years then evaluated and blended together. After blending, the wine goes through a fining process using a traditional fining agent of natural egg whites, to integrate the tannins and soften the acidity in the wine. The wine is bottled without filtration and further aged in bottle another 6 months.

Food Pairings:  Steak and beef dishes, veal, rich pasta dishes.
